Overnight Oats

Serves 2


  • 1 cup rolled oats
  • 1 cup raspberries (frozen is fine)
  • 1/2 cup shredded coconut
  • 1/4 cup chopped macadamias
  • 1/2 teaspoon concentrated natural vanilla extract
  • 1 cup of almond or coconut milk


  1. Put the ingredients into a container that has a lid (the glass ones are great) and mix well.
  2. Leave it in the fridge for several hours or overnight.
  3. Serve.
  4. Top with coconut yoghurt or natural yoghurt and a drizzle of maple syrup or rice malt syrup (or cinnamon) and enjoy!
