Zucchini Fritters


  • 2 grated zucchinis
  • 1 tsp. himilayan salt
  • 2 spring onions
  • 1 large clove of garlic
  • pepper to taste
  • 1 egg
  • 1/2 c. of almond meal
  • 1/2 tsp. of baking powder
  • crumbly goats cheese – small handful
  • coconut oil or butter for frying


  1. Grate zucchini into large bowl (better yet, whizz it up in the food processor).
  2. Toss in salt and leave for ten minutes.  
  3. Zucchini holds a lot of moisture so you will need to wring it out so to speak.
  4. The easiest way is squeeze it through a cheese cloth.
  5. Return to the bowl and add all other ingredients and mix until the consistency is smoothish.
  6. Heat a pan on the stove with a bit of coconut oil or butter.
  7. Scoop mixture onto pan. We like to make them quite thick but whatever you prefer.
  8. Cook on each side for around 4 mins each.
  9. These can be made in advance and kept in the fridge ready to heat up for a warm brekkie during the week or serve cold for lunches.
