Like many of you, I gain a lot of inspiration for creating wholesome and flavoursome family meals from picking up beautiful seasonal fresh produce from the local forages markets, the community co-op and of course from my very own vegie garden. There is something so deliciously satisfying in being able to come home at the end of the day and walk out into your vegie garden and ask yourself ‘so what’s for dinner tonight?’.
Now, whilst I don’t want to seem ungrateful for nature’s offerings, unfortunately the answer to that very question for a few weeks straight now has been ‘cherry tomatoes’. My $3 investment in a cherry tomato seedling over 12 months ago, has since repaid me in hundreds upon hundreds of cherry tomatoes. My plot has been taken over by the tiny little seedling I planted in the very corner of my garden bed, hoping and praying it would yield at least one punnet of tomatoes to pay back the initial outlay. Who’d have thought that little over 1 year later, it would have grown into the monster it has, taking over my 1 metre plot, creating a beautiful tangled vine dotted with juicy rich tomatoes which seem to be multiplying exponentially every day. My boys take great pleasure every day in picking the vine’s delights. We cannot give them away at the rate they are growing.
And it doesn’t appear as though I am alone in my cherry tomato growing prowess. So many of you also seem to be basking in your early spring harvests of backyard tomatoes asking what the hell you can do with kilos of tomatoes you are picking from your own backyards or picking up for a steal at your local grocers. So naturally I have taken it upon myself to become creative with tomato based recipes to make the very best of nature’s offerings to make sure we are not letting this bumper tomato season go to waste. And this recipe is certainly a real bottler, literally. Sweet Cherry Tomato Relish. Make a batch for yourself to use as a side for a steak, add to a plain old pasta dish to give it some pizazz or simply add to some toasted garlic bread to make a really delicious bruschetta. Or why not bottle some leftover in beautiful little glass jars and handmade labels, ready for homemade gifts for friends and family.
This recipe uses about 500g of fresh cherry tomatoes to yield one 500ml jar full of the sweetest, most delicious tomato relish you will taste. Typically relish is packed with sugar to add sweetness, but as you know, I am not a fan of sugar, so I have come up with a combination of flavours that when combined yield all the sweetness you could desire in a relish, without the need to add any additional sweetener.
Delish Tomato Relish
- 2 tbsp olive oil
- 1 red onion, sliced
- 1-2 cloves garlic, minced
- 500g of cherry tomatoes
- 1 tbsp apple cider vinegar
- 1 tsp mustard seeds
- ½ tsp curry powder
- ½ tsp ground cumin
- Salt to taste
- Add the oil and onions to a saucepan and sautee until soft and clear. Add garlic, curry powder and cumin and fry for a minute more.
- Add the whole cherry tomatoes, mustard seeds, and vinegar.
- Cook until the tomatoes have broken down and taste for seasoning.
- Simmer for 15-20 minutes or until reduced to your liking. Transfer to a glass jar and fridge once cooled.
Enjoy the spoils of your labour.
