Apricot Bites

Apricot Balls Recipe - Lunchbox special

This recipe can be made into bite size balls or into a slice and cut into squares for easy lunch box treats for the kids.

They are bite size bundles of goodness combining fruit, seeds and coconut providing a healthy snack for kids to help keep energy levels up without being fuelled by refined sugars, additives or preservatives.




  • 1 cup fine desiccated coconut
  • 1 cup organic dried apricots
  • ¼ cup sunflower seeds
  • 1 tbsp chia seeds


  1. Add the ingredients to your food processor and blend. If you have time to soak the apricots in boiling water for a few minutes before blending this will speed up the process by softening them.
  2. Once combined, either roll the mixture into bite sized balls coat with coconut or chia seeds, or press firmly into a loaf tin to set before slicing into squares.
  3. Freeze to set.
