This recipe can be made into bite size balls or into a slice and cut into squares for easy lunch box treats for the kids.
They are bite size bundles of goodness combining fruit, seeds and coconut providing a healthy snack for kids to help keep energy levels up without being fuelled by refined sugars, additives or preservatives.
- 1 cup fine desiccated coconut
- 1 cup organic dried apricots
- ¼ cup sunflower seeds
- 1 tbsp chia seeds
- Add the ingredients to your food processor and blend. If you have time to soak the apricots in boiling water for a few minutes before blending this will speed up the process by softening them.
- Once combined, either roll the mixture into bite sized balls coat with coconut or chia seeds, or press firmly into a loaf tin to set before slicing into squares.
- Freeze to set.
