- 2 cups fine desiccated coconut
- 1 cup organic dried apricots
- 1 tsp chia seeds or sunflower seeds
- Soak apricots in boiling water to soften for about 5 minutes.
- Then drain and rinse.
- Place all ingredients in your food processor and blitz until the mixture comes together.
- Roll into bite sized balls, coat in desiccated coconut and place in the freezer to set for 30 minutes.
